  • 8 ounces cream cheese, softened
  • ½ cup sharp cheddar cheese, shredded
  • 12 slices thin-cut bacon
  • ¼ cup BBQ sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • Optional: 1 tablespoon finely chopped cilantro for garnish
  • Optional: ½ teaspoon smoked paprika mixed into filling

Instructions

  1. Preheat oven to 400°F (200°C) or prepare grill for medium heat.
  2. Wearing gloves, slice each jalapeño in half lengthwise and scoop out seeds and membranes.
  3. In a mixing bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, onion powder, smoked paprika (if using), salt, and black pepper until smooth.
  4. Generously fill each jalapeño half with the cheese mixture.
  5. Cut bacon slices in half if too long. Wrap each stuffed jalapeño half with a bacon strip, securing with a toothpick if necessary.
  6. Brush the bacon-wrapped jalapeños with BBQ sauce using a pastry brush.
  7. Place jalapeños on a wire rack over a baking sheet or directly on grill grates.
  8. Bake or grill for 20-25 minutes, turning once halfway through, until bacon is crispy and cheese is bubbling.
  9. Let cool for 5 minutes to firm up. Remove toothpicks and garnish with chopped cilantro before serving.

Notes

Use thin-cut bacon for easier wrapping and crispier results. Soften cream cheese before mixing for smooth filling. Seed jalapeños carefully to control heat. Turn jalapeños halfway through cooking for even crispiness. Apply BBQ sauce late to prevent burning. For extra crispiness, broil briefly at the end but watch closely.
