Instructions

  1. Preheat the oven and skillet: Place your 9-inch cast iron skillet in the oven and preheat to 425°F (220°C) for about 10 minutes until the skillet is smoking hot.
  2. Mix the dry ingredients: In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
  3. Combine the wet ingredients: In a separate bowl, whisk buttermilk, egg, and melted butter until smooth.
  4. Make the batter: Pour the wet ingredients into the dry and gently fold with a spatula until just combined. Do not overmix.
  5. Butter the skillet: Remove the hot skillet from the oven using oven mitts and add 1 tablespoon melted butter, swirling to coat the bottom and sides.
  6. Pour in the batter: Immediately pour the batter into the hot skillet and smooth the top with a spatula. You should hear a sizzle.
