Instructions

  1. Activate the yeast: In a mixing bowl, combine warm water and honey. Sprinkle in instant yeast, stir lightly, and let sit for 5 minutes until foamy.
  2. Mix the dough: Add flour and salt to the yeast mixture. Pour in ⅓ cup olive oil. Combine until a shaggy dough forms.
  3. Knead the dough: Knead with a stand mixer dough hook for 5-6 minutes or by hand for 8-10 minutes until smooth and elastic.
  4. First rise: Shape dough into a ball, place in a lightly oiled bowl, cover, and let rise in a warm spot for about 1 hour until doubled in size.
  5. Prepare baking sheet: Line a half-sheet pan (18 x 13 inches) with parchment paper. Drizzle 2 tablespoons olive oil over the paper and spread evenly.
  6. Shape focaccia: Punch down dough and transfer to pan. Press dough evenly to cover the pan edges.
  7. Second rise: Cover and let rest for 20-30 minutes to puff up slightly.
  8. Make dimples and season: Press deep dimples all over dough. Drizzle 2 tablespoons olive oil over the top, letting it pool in dimples. Sprinkle everything bagel seasoning generously.
  9. Bake: Preheat oven to 425°F (220°C). Bake for 20-25 minutes until golden brown and crispy around edges.
  10. Cool and serve: Let cool for 10 minutes in pan, transfer to wire rack, slice, and serve warm or at room temperature.

Notes

Do not skimp on olive oil for crispiness and flavor. Press dimples firmly but gently to trap olive oil pockets. Apply everything bagel seasoning after second rise to avoid burning. For extra crispiness, bake on a preheated baking stone or flip focaccia halfway through baking. Dough can be refrigerated after first rise for up to 24 hours. Reheat leftovers in oven or toaster oven to maintain crispiness.
