Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse 1 pound (450 grams) of radishes under cold water and pat dry thoroughly. Slice each radish in half lengthwise or quarters if large.
  3. In a medium mixing bowl, combine 2 tablespoons olive oil, 3-4 minced garlic cloves, 1 teaspoon flaky sea salt, ½ teaspoon freshly ground black pepper, and if using, a pinch of dried thyme or rosemary. Stir well.
  4. Toss the radishes in the oil and garlic mixture until well coated.
  5. Arrange radishes cut side down on a parchment-lined baking sheet, spacing them apart to avoid steaming.
  6. Roast in the oven for 18-22 minutes, flipping halfway through at about 10 minutes, until golden and crisp on the outside and tender inside.
  7. Optional: Broil for 1-2 minutes for extra crispiness, watching closely to avoid burning.
  8. Optional: Sprinkle with lemon zest or grated Parmesan cheese immediately after removing from the oven.
  9. Serve warm as a flavorful side or cool slightly and add to salads.
