Ingredients

  • Bread: sourdough, whole wheat, or classic white sandwich bread
  • Cheese: sharp cheddar, mozzarella, Swiss, pepper jack, provolone
  • Butter: unsalted, softened
  • Mayonnaise (optional, for spreading on outside)
  • Additional fillings: crispy bacon strips, tomato slices, caramelized onions, avocado slices, fresh basil leaves or arugula
  • Seasonings: garlic powder, smoked paprika, black pepper, sea salt

Instructions

  1. Prep your ingredients: grate or slice cheeses evenly; wash and slice veggies or herbs; cook bacon until crisp and drain.
  2. Spread a thin layer of softened butter or mayonnaise on one side of each bread slice (this will be the outside).
  3. Assemble the sandwich by layering about 2 oz (60 g) of cheese on the unbuttered side of one slice, add desired fillings, then top with the other slice, buttered side out.
  4. Heat a non-stick skillet or cast-iron pan over medium-low heat until warm.
  5. Place the sandwich in the pan and press lightly with a spatula. Cook for 4-5 minutes until the bread is golden and crispy.
  6. Flip the sandwich carefully and cook the other side for another 4-5 minutes.
  7. Check if the cheese is melted; if not, lower heat and cover the pan for a minute to encourage melting.
  8. Remove from pan and let rest for 1 minute, then slice diagonally and serve.

Notes

Use medium-low heat to avoid burning the bread before the cheese melts. Mayonnaise on the outside browns beautifully and adds tang. Shredded cheese melts faster and more evenly. Pat wet fillings dry to prevent sogginess. Cover pan briefly if cheese isn’t melting fully. Avoid pressing too hard with spatula to keep sandwich light and melty.
