  • 1 pre-made pizza dough (about 12 inches) or homemade dough
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 4 slices bacon, cooked and chopped (or cooked sausage crumbles)
  • 3 large eggs, lightly beaten
  • 1/2 cup diced bell peppers (red or yellow)
  • 1/4 cup finely chopped red onion
  • 1/2 cup fresh spinach leaves
  • Chopped green onions (for garnish)
  • Cherry tomatoes, halved (for garnish)
  • 1 tablespoon olive oil
  • Salt to taste
  • Freshly ground black pepper to taste
  • Pinch of smoked paprika

Instructions

  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat for about 30 minutes.
  2. Cook the bacon or sausage in a skillet over medium heat until crisp, about 6–8 minutes. Drain on paper towels.
  3. Dice bell peppers, chop onions, and wash spinach leaves; set aside.
  4. Roll out the pizza dough on a lightly floured surface to a 12-inch circle. Transfer to a parchment-lined baking sheet or pizza peel if using a stone.
  5. Brush the crust lightly with olive oil.
  6. Sprinkle mozzarella, cheddar, and Parmesan cheese evenly over the crust.
  7. Add cooked bacon or sausage and scatter diced bell peppers, red onion, and spinach over the cheese.
  8. Drizzle the beaten eggs lightly over the toppings or dollop small spoonfuls across the pizza.
  9. Season with salt, pepper, and smoked paprika.
  10. Bake the pizza for 12–15 minutes until the crust is golden and crispy, cheese is bubbly, and eggs are set but tender.
  11. Remove from oven and garnish immediately with chopped green onions and halved cherry tomatoes.
  12. Slice and serve warm.

Notes

Preheat oven and pizza stone or baking sheet for a crispier crust. Brush crust with olive oil for golden color. Avoid overloading toppings to prevent soggy crust. Drizzle eggs lightly to create creamy pockets. Tent pizza with foil if edges brown too quickly. Reheat leftovers in oven at 375°F for 8–10 minutes to maintain crispiness.
