A quick and easy game day snack featuring crispy tater tots topped with spicy buffalo chicken and a creamy blue cheese drizzle. Perfect for gatherings and satisfying cravings with a balance of heat, crunch, and creaminess.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized chunks
  • 2 tbsp olive oil
  • ½ cup buffalo sauce (Frank’s RedHot recommended)
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and pepper, to taste
  • 1 (32 oz) bag frozen tater tots
  • ½ cup blue cheese crumbles
  • ⅓ cup buttermilk (or milk with a splash of lemon juice)
  • 2 tbsp mayonnaise
  • 1 tsp apple cider vinegar or white wine vinegar
  • Freshly ground black pepper, to taste
  • Optional toppings: chopped green onions or chives, shredded sharp cheddar cheese or pepper jack, celery sticks, fresh cilantro

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Spread frozen tater tots in a single layer and bake for 25-30 minutes, flipping halfway through until golden and crispy.
  2. While tots bake, heat olive oil in a large skillet over medium-high heat. Add chicken chunks, season with salt, pepper, garlic powder, and smoked paprika. Cook 6-8 minutes, turning occasionally, until browned and cooked through.
  3. Remove chicken from heat and toss with buffalo sauce until evenly coated.
  4. In a bowl, whisk together blue cheese crumbles, buttermilk, mayonnaise, and vinegar until smooth but slightly chunky. Add pepper to taste.
  5. Transfer crispy tots to a serving plate or keep on baking sheet. Top evenly with buffalo chicken, sprinkle shredded cheese if using, then drizzle blue cheese sauce generously over the top.
  6. Garnish with chopped green onions or fresh herbs. Serve immediately with celery sticks on the side.

Notes

For extra crispiness, flip tots halfway through baking and optionally broil for 1-2 minutes at the end. Avoid overcrowding the pan when cooking chicken to ensure a good sear. If blue cheese drizzle thickens, stir in a splash of milk or buttermilk to loosen. Add fresh toppings just before serving to keep them vibrant. Leftovers can be reheated in the oven at 375°F for 10-15 minutes to maintain crispiness; avoid microwaving.
