  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
  2. Melt the butter in a microwave-safe bowl or saucepan and let it cool slightly.
  3. In a mixing bowl, whisk together the rolled oats, flour, and salt.
  4. In a separate bowl, combine the melted butter, brown sugar, granulated sugar, and vanilla extract. Whisk until smooth and creamy.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until fully incorporated.
  6. Using a teaspoon, drop small amounts of batter onto the prepared baking sheets, leaving plenty of space between each cookie as they spread significantly while baking.
  7. Bake for 7-9 minutes, or until the cookies are golden brown and lacy.
  8. Remove the baking sheets from the oven and allow the cookies to cool on the parchment paper for about 5 minutes before transferring them to a cooling rack. They’ll crisp up as they cool.
