  • About 12 sheets phyllo dough, thawed if frozen
  • 1/2 cup (115g) unsalted butter, melted
  • 8 oz (225g) feta cheese, crumbled
  • 4 oz (115g) cream cheese, softened
  • 2 tablespoons (30ml) Greek yogurt (optional)
  • Zest of 1 medium lemon
  • 1 tablespoon fresh herbs (dill or parsley), chopped
  • 1 small clove garlic, minced (optional)
  • Freshly cracked black pepper, to taste
  • Honey or balsamic reduction for drizzling (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin to prevent sticking.
  2. Prepare the phyllo dough: Lay one sheet of phyllo on a clean surface and brush lightly with melted butter. Layer a second sheet on top and brush again. Repeat until you have 4 layers stacked. Cut the stacked sheets into 12 equal squares large enough to fit into muffin cups.
  3. Form the cups: Gently press each square into a muffin cup, shaping it to create a cup with edges. Brush the tops with a touch more butter. Bake for 12-15 minutes or until golden and crisp. Remove from oven and let cool slightly before removing from the tin.
  4. Make the whipped feta filling: In a food processor or mixing bowl, combine crumbled feta, softened cream cheese, Greek yogurt, lemon zest, herbs, garlic, and cracked black pepper. Blend until smooth and fluffy. Taste and adjust seasoning as desired.
  5. Assemble & serve: Spoon or pipe the whipped feta filling into each cooled phyllo cup. Drizzle lightly with honey or balsamic reduction if desired. Serve immediately or refrigerate assembled cups for up to 2 hours before serving.

Notes

If phyllo tears, patch with a small piece and continue. Keep leftover phyllo covered with a damp towel to prevent drying. Bake cups just until golden to avoid brittleness. Assemble filling last minute for best texture. Gluten-free and dairy-free substitutions available.
