Instructions

  1. Activate the yeast: In a large bowl, combine warm water, sugar, and instant yeast. Stir gently and let sit for 5 minutes until foamy.
  2. Make the dough: Add flour and oil to the yeast mixture. Stir to combine, then knead by hand or with a stand mixer for 7-8 minutes until smooth and elastic.
  3. First rise: Lightly oil a clean bowl, place dough inside, cover, and let rise in a warm spot for 45 minutes to 1 hour until doubled in size.
  4. Shape the pretzel bites: Punch down dough, roll out to ½ inch thickness, and cut with a shamrock cookie cutter. Reroll scraps and repeat.
  5. Prepare baking soda bath: Heat 10 cups (2.4 liters) water to a gentle simmer, add baking soda carefully. Dip each pretzel bite for 20-30 seconds, then place on parchment-lined baking sheet.
