  • 1/4 cup honey (85 g)
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce (60 ml), low-sodium preferred
  • 2 tablespoons rice vinegar (30 ml)
  • 1 teaspoon sesame oil (5 ml)
  • 1/4 cup water (60 ml)
  • 1 tablespoon cornstarch (8 g)
  • Freshly ground black pepper, to taste
  • Optional garnishes: toasted sesame seeds, chopped green onions

Instructions

  1. Pat the chicken thighs dry with paper towels to help the skin crisp later. Season lightly with black pepper.
  2. In a bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, sesame oil, and water until well combined. Set aside.
  3. Place the chicken thighs skin-side down in the slow cooker. Pour the honey garlic mixture evenly over the top, partially covering the chicken.
  4. Cover and cook on low for 5-6 hours or on high for 2.5-3 hours until chicken is tender and reaches an internal temperature of 165°F (74°C).
  5. Remove chicken thighs carefully and set aside. Pour the cooking liquid into a saucepan.
  6. Mix cornstarch with 2 tablespoons cold water to make a slurry, then stir it into the sauce. Heat over medium until the sauce thickens and becomes glossy, about 3-5 minutes.
  7. Place the chicken thighs on a foil-lined baking sheet skin-side up. Brush generously with the thickened honey garlic glaze.
  8. Broil on high for 3-5 minutes, watching closely, until the skin bubbles and crisps up nicely.
  9. Sprinkle with toasted sesame seeds and chopped green onions. Serve hot over rice, noodles, or alongside steamed greens.
