  • 1 teaspoon fresh rosemary or thyme, finely chopped (or dried herbs)
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Wash the baby potatoes thoroughly; no need to peel.
  3. Place potatoes in a large pot, cover with cold water, and bring to a boil.
  4. Cook potatoes until fork-tender, about 15-20 minutes.
  5. Drain potatoes well and let them sit for a minute to dry off.
  6. Line a baking sheet with parchment paper or a silicone baking mat and drizzle about 2 tablespoons of olive oil evenly on the surface.
  7. Place potatoes on the baking sheet, spacing them evenly.
  8. Use a potato masher or the bottom of a sturdy glass to gently press each potato down until about ½ inch (1.3 cm) thick.
  9. Drizzle the remaining olive oil over the smashed potatoes.
  10. Sprinkle salt, black pepper, garlic powder, and chopped herbs evenly over the potatoes.
  11. If using, sprinkle grated Parmesan cheese on each potato.
  12. Bake for 25-30 minutes, turning the potatoes halfway through baking, until edges are golden and crisp.

Do not overcrowd the baking sheet to ensure crispiness. Use gentle pressure when smashing potatoes to avoid crumbling.
