  • 34 pounds beef chuck roast, trimmed of excess fat
  • 4 cups beef broth (low-sodium recommended)
  • 1 large onion, sliced thin
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon black pepper, freshly ground
  • 68 French rolls, split
  • 68 slices provolone cheese
  • Optional toppings: sautéed mushrooms, bell peppers, or horseradish sauce

Instructions

  1. Rub the chuck roast with black pepper and a pinch of salt.
  2. In the crock pot, add the sliced onion, minced garlic, beef broth, Worcestershire sauce, and soy sauce. Place the beef on top.
  3. Cover and cook on low for 8 hours or on high for 4-5 hours, until the beef is fork-tender.
  4. Use tongs to remove the roast from the crock pot and shred it into bite-sized pieces. Return the beef to the pot to soak in the juices.
  5. Split the French rolls and toast them lightly in the oven at 350°F (175°C) for 5 minutes.
  6. Layer shredded beef and a slice of provolone cheese onto each roll. Pop them back in the oven for 2-3 minutes to melt the cheese.
  7. Ladle the crock pot juices into small bowls for dipping. Serve the sandwiches warm and enjoy!
