  • 3 pounds boneless, skinless chicken breasts or thighs
  • 1 ½ cups BBQ sauce
  • ½ cup chicken broth or water
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 3 cups shredded green cabbage
  • 1 cup shredded carrots
  • ½ cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or sugar
  • ½ teaspoon celery seed (optional)
  • Salt and pepper, to taste
  • 12 slider buns or small sandwich rolls
  • Optional: pickles or sliced jalapeños for topping

Instructions

  1. Spray crockpot insert with non-stick cooking spray or lightly oil it.
  2. Mix smoked paprika, garlic powder, salt, and pepper in a small bowl and rub evenly over chicken.
  3. Place seasoned chicken in crockpot in a single layer if possible.
  4. Combine BBQ sauce, chicken broth, and apple cider vinegar in another bowl and pour over chicken.
  5. Cover and cook on low for 6–7 hours or on high for 3–4 hours until chicken is fork-tender.
  6. Remove chicken and shred using two forks; return shredded chicken to crockpot and stir into sauce.
  7. Combine shredded cabbage, carrots, mayonnaise, apple cider vinegar, honey, celery seed, salt, and pepper in a large bowl; mix well and chill until serving.
  8. Optional: Toast slider buns under broiler for 1–2 minutes or on a hot skillet until lightly browned.
  9. Assemble sliders by spooning BBQ chicken onto bun bottoms, topping with coleslaw, then adding bun tops and optional pickles or jalapeños.
  10. Serve immediately while chicken is warm and coleslaw is cool.

Notes

If sauce is too thin after shredding chicken, cook uncovered on high for 15–20 minutes to thicken. Chicken thighs cook faster and stay juicier than breasts. For less creamy coleslaw, reduce mayo and add more vinegar or lemon juice. Use gluten-free buns or lettuce wraps for gluten-free diet. Use dairy-free mayo for dairy-free version.
