  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions

  1. Slice 1.5 pounds of flank steak thinly against the grain into strips about 1/4-inch thick.
  2. In a medium bowl, whisk together 1/2 cup low-sodium soy sauce, 3 minced garlic cloves, 3 tablespoons packed brown sugar, and 1/2 cup beef broth until sugar dissolves.
  3. Place the sliced beef in the crockpot and pour the sauce over it. Stir gently to coat all pieces.
  4. Cover and cook on low for 3 hours or on high for 1.5 to 2 hours until beef is tender but not falling apart.
  5. About 30 minutes before cooking ends, add 4 cups fresh broccoli florets on top of the beef. Cover and continue cooking.
  6. Mix 2 tablespoons cornstarch with 2 tablespoons water until smooth. Stir this slurry into the crockpot.
  7. Replace the lid and cook for another 10-15 minutes until the sauce thickens and coats the beef and broccoli.
  8. Give everything a gentle stir before serving. Adjust seasoning with black pepper if desired.
