  • 3/4 cup wild rice blend
  • 3 medium carrots, diced
  • 3 ribs celery, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk (whole or 2%)
  • Fresh parsley, for garnish (optional)

Instructions

  1. Dice the carrots, celery, and onion into small, even pieces. Mince the garlic. Rinse the wild rice under cold water.
  2. Add the diced carrots, celery, onion, garlic, wild rice, chicken breasts, bay leaf, dried thyme, salt, and pepper to your slow cooker. Pour in the chicken broth to cover all ingredients.
  3. Set the slow cooker to LOW for 6-7 hours or HIGH for 4 hours, until the chicken is cooked through and the rice is tender.
  4. Remove the cooked chicken breasts to a plate and shred with two forks. Return the shredded chicken to the crockpot and stir.
  5. Melt the butter in a medium saucepan over medium heat. Whisk in the flour until smooth and bubbly, about 1-2 minutes. Gradually pour in the milk, whisking constantly, and cook until thickened (about 3-4 minutes).
  6. Pour the hot roux-milk mixture into the crockpot and stir well to combine. Let it cook another 10 minutes on LOW.
  7. Remove the bay leaf. Taste and adjust salt, pepper, or thyme as needed. Garnish with chopped fresh parsley if desired.
  8. Ladle into bowls and serve hot.
