  • ½ teaspoon vanilla extract
  • 2 tablespoons toasted chopped nuts (almonds or pistachios, optional)
  • A tiny pinch of sea salt

Instructions

  1. Rinse and dry 1 cup (150g) of fresh strawberries thoroughly. Hull the strawberries by removing the green leafy tops.
  2. Place 3 ounces (85g) of chopped dark chocolate in a microwave-safe bowl. Heat in 20-second intervals, stirring in between, until smooth. Alternatively, melt using a double boiler on low heat, stirring gently. Add a tiny pinch of sea salt to the chocolate to enhance its flavor.
  3. Holding each strawberry by the stem, dip it into the melted chocolate, coating about two-thirds of the berry. Let excess chocolate drip off, then place the dipped strawberry on a parchment-lined baking sheet to set. Refrigerate for 15-20 minutes or until chocolate hardens.
  4. In a medium bowl, combine 1 cup (240g) of small-curd cottage cheese with ½ teaspoon vanilla extract and 1 tablespoon honey or maple syrup if you prefer a sweeter touch. Stir gently until smooth but keep some texture for creaminess.
  5. Spoon the flavored cottage cheese into your serving bowl. Arrange the chilled chocolate covered strawberries on top elegantly.
  6. Sprinkle 2 tablespoons of toasted chopped nuts over the bowl for crunch. Optionally, add a few fresh mint leaves or a light dusting of cinnamon.

Ensure strawberries are completely dry before dipping to prevent chocolate from seizing. Melt chocolate slowly and stir frequently for a smooth texture.
