Ingredients

  • 1 pint fresh strawberries, medium-sized and firm
  • 8 oz (225g) cream cheese, softened to room temperature
  • ½ cup (60g) powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 6 oz (170g) semi-sweet chocolate, finely chopped or chips
  • 2 oz (55g) dark chocolate (optional), finely chopped
  • 1 tablespoon coconut oil or vegetable oil

Instructions

  1. Rinse 1 pint of medium firm strawberries gently and pat dry with paper towels. Remove the green tops and set aside.
  2. In a medium mixing bowl, beat 8 oz softened cream cheese with ½ cup sifted powdered sugar and 1 teaspoon pure vanilla extract until smooth and creamy, about 3-4 minutes on medium speed.
  3. Using a small spoon or melon baller, scoop the cheesecake mixture into small, uniform balls about 1 inch in diameter. Place each ball on a parchment-lined baking sheet. Slightly flatten the bottom of each ball with your fingers. Chill in the fridge for at least 30 minutes until firm.
  4. Chop 6 oz semi-sweet chocolate and 2 oz dark chocolate (optional) and place in a microwave-safe bowl. Add 1 tablespoon coconut or vegetable oil. Microwave in 20-second intervals, stirring well after each burst until smooth and glossy.
  5. Using a fork or dipping tool, carefully dip each cheesecake ball into the melted chocolate, letting excess drip off. Place back on parchment paper. Optionally drizzle extra chocolate on top.
  6. Transfer the dipped bites to the fridge and chill for at least 1 hour until the chocolate hardens completely.

Notes

Use room temperature cream cheese for a smooth filling. Dry strawberries thoroughly to ensure chocolate sticks well. Melt chocolate in short microwave bursts to avoid seizing. Chill bites well before and after dipping for a crisp chocolate shell. Store leftovers in an airtight container in the fridge for up to 3 days. Avoid freezing to maintain texture.
