These chocolate-dipped strawberry roses combine fresh, juicy strawberries with luscious dark chocolate, shaped elegantly like roses with stems. Perfect as a charming edible bouquet for gifts or party treats.

Ingredients

Scale
  • 20 medium to large fresh strawberries with stems attached
  • 8 ounces (225 grams) high-quality dark chocolate (60-70% cocoa)
  • 2 ounces (60 grams) white chocolate (optional, for drizzling)
  • 1 tablespoon (15 ml) vegetable oil or coconut oil
  • Toothpicks or bamboo skewers
  • Wax or parchment paper

Instructions

  1. Wash and dry strawberries thoroughly, especially around the stems, to ensure no moisture remains.
  2. Chop dark chocolate into small pieces and melt using a double boiler or microwave in 20-second intervals, stirring frequently until smooth.
  3. Stir in 1 tablespoon of vegetable or coconut oil to the melted chocolate for a glossy finish.
  4. Line a baking sheet with wax or parchment paper.
  5. Insert toothpicks or bamboo skewers into the stem end of each strawberry to create stems.
  6. Hold each strawberry by the toothpick and dip into the melted chocolate, coating about two-thirds of the berry, leaving the top exposed to mimic rose petals.
  7. Allow excess chocolate to drip off and place dipped strawberries on the lined baking sheet.
  8. Use a small spoon, fork, or toothpick to drag chocolate outward in petal-like strokes for a rose effect before the chocolate sets.
  9. Optional: Melt white chocolate and drizzle thin lines over the dipped strawberries using a piping bag or fork for decoration.
  10. Let the strawberries set at room temperature for 30 minutes or refrigerate for 15 minutes to harden the chocolate.
  11. Store finished strawberries in a cool place or refrigerate in an airtight container for up to 2 days.

Notes

Use fresh, firm strawberries with long green stems for best results. Avoid moisture to prevent chocolate from seizing. Work in a cool, dry environment. Reheat chocolate gently if it thickens. Store in a single layer to avoid damaging chocolate petals. Adding a pinch of sea salt on chocolate before it sets enhances flavor.
