  • 1 oz (28g) dark chocolate (70% cocoa or higher), roughly chopped or shaved
  • 1 teaspoon (5ml) honey or maple syrup (optional)
  • ¼ teaspoon (1ml) vanilla extract (optional)
  • 1 tablespoon (15g) chia seeds or flaxseeds (optional)

Instructions

  1. Measure 1 cup (225g) of cottage cheese and place it in a mixing bowl. For a smoother texture, gently stir or blend for 10-15 seconds (optional).
  2. Stir in ¼ teaspoon (1ml) vanilla extract and 1 teaspoon (5ml) honey or maple syrup if desired for sweetness. Mix well.
  3. Gently fold in ½ cup (60g) fresh raspberries using a spatula or large spoon, taking care not to crush them.
  4. Add 1 tablespoon (15g) chia seeds or ground flaxseeds if using, and stir lightly to distribute.
  5. Chop 1 oz (28g) dark chocolate into small chunks or grate it, then scatter over the top of the bowl.
  6. Serve immediately for best texture and flavor. If preparing ahead, keep toppings separate and add just before serving.
