Instructions

  1. Mix the Peanut Butter Filling (10 minutes): In a medium bowl, combine peanut butter, powdered sugar, and vanilla extract. Mix with an electric mixer or sturdy spoon until smooth and slightly firm but pliable.
  2. Shape the Truffles (10 minutes): Line a baking sheet with parchment paper. Portion the peanut butter mixture into 1-inch egg-shaped balls using a tablespoon or small cookie scoop. Roll to smooth and place on the baking sheet. Freeze for 15-20 minutes to firm up.
