  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour (or gluten-free flour)
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup peanut butter, creamy
  • 1 cup mini peanut butter cups, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth. Add eggs and vanilla extract, whisking until fully combined.
  3. In a separate bowl, sift together flour, cocoa powder, and salt. Gradually fold the dry ingredients into the wet mixture using a rubber spatula until just combined.
  4. Warm the peanut butter slightly in the microwave for about 20 seconds. Drop spoonfuls of peanut butter onto the brownie batter in the pan and use a knife to create a swirl pattern.
  5. Scatter the mini peanut butter cups evenly over the top of the batter.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  7. Transfer the pan to a cooling rack and let the brownies cool for at least 30 minutes before slicing.
