A quick and easy brunch recipe featuring fluffy brioche or challah bread stuffed with a creamy mixture of cream cheese and fresh strawberries, cooked to golden perfection.

  • 8 ounces cream cheese, softened
  • 1 cup fresh strawberries, sliced
  • 4 large eggs, room temperature
  • 1 cup whole milk (240 ml)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 2 tablespoons granulated sugar
  • 2 tablespoons unsalted butter, for cooking
  • Powdered sugar, for dusting (optional)
  • Maple syrup or honey, for serving

Instructions

  1. In a bowl, beat 8 ounces of softened cream cheese until smooth and fluffy, about 2-3 minutes using an electric mixer or a vigorous whisk. Set aside.
  2. Wash and thinly slice 1 cup of fresh strawberries. Gently fold them into the cream cheese, being careful not to crush the berries.
  3. Take 8 thick slices of brioche or challah bread. Using a sharp knife, carefully slice a pocket into the side of each slice without cutting all the way through to create a pouch.
  4. Spoon about 2 tablespoons of the cream cheese and strawberry mixture into each pocket. Press the bread gently to close but allow some filling to peek out.
  5. In a large bowl, whisk together 4 large eggs, 1 cup whole milk, 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon, and 2 tablespoons granulated sugar until fully combined and slightly frothy.
  6. Preheat a non-stick skillet or griddle over medium heat and melt 1 tablespoon butter.
  7. Dip each stuffed bread slice into the custard mixture, soaking about 20-30 seconds on each side without oversoaking.
  8. Place the soaked stuffed bread in the skillet and cook for 3-4 minutes per side, or until golden brown and slightly crisp. Add remaining butter as needed.
  9. Transfer cooked French toast to plates, dust with powdered sugar, and drizzle with maple syrup or honey. Serve immediately.

Notes

Use day-old brioche or challah for best custard soak without sogginess. Do not oversoak bread in custard to prevent falling apart. Cook over medium heat to achieve golden crispness without burning. Keep cooked French toast warm in a low oven if cooking for a crowd.
