  • 2 ½ cups (315g) all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 ¼ teaspoons (one packet) active dry yeast
  • ¾ cup (180ml) warm water (about 110°F/43°C)
  • 2 tablespoons olive oil or melted butter
  • 1 cup (100g) shredded sharp cheddar cheese
  • 1 cup (100g) shredded mozzarella cheese
  • 2 cloves garlic, minced (optional)
  • 1 teaspoon dried Italian herbs or oregano
  • 1 egg, beaten (for egg wash)
  • Coarse sea salt or flaky salt (to sprinkle on top)
  • Extra olive oil or melted butter (to brush after baking)

Instructions

  1. Activate the yeast by combining warm water (¾ cup/180ml) with sugar (1 tablespoon) and sprinkling yeast (2 ¼ teaspoons) over the top. Let sit for 5–10 minutes until foamy.
  2. In a large mixing bowl, whisk together flour (2 ½ cups/315g) and salt (1 teaspoon). Add the foamy yeast mixture and olive oil (2 tablespoons). Stir until a rough dough forms.
  3. Turn dough onto a floured surface and knead for 8–10 minutes until smooth and elastic. Add flour if sticky, but keep dough soft and pliable.
  4. Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for 1 hour or until doubled in size.
  5. While dough rises, mix shredded cheddar (1 cup) and mozzarella (1 cup) with minced garlic (2 cloves) and Italian herbs (1 teaspoon).
  6. Punch down the risen dough and roll out on a floured surface into a 12×15 inch rectangle.
  7. Evenly sprinkle the cheese mixture over half of the dough rectangle. Fold dough over to cover cheese and press gently to seal.
  8. Slice dough into 1-inch strips using a sharp knife or pizza cutter. Twist each strip a few times and place on a parchment-lined baking sheet.
  9. Brush each twist with beaten egg and sprinkle with coarse sea salt.
  10. Bake at 400°F (200°C) for 15–18 minutes until golden and crispy.
  11. Brush twists with melted butter or olive oil after baking and let cool slightly before serving.

Notes

If cheese oozes too much, fold dough tighter or chill twists before baking. Use parchment paper for easier cleanup. Dough can be prepared ahead and refrigerated overnight. For gluten-free, use gluten-free flour blend and add an extra egg. Baking time may vary by oven; tent with foil if browning too fast.
