Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a small bowl, mix chili powder, ground cumin, paprika, garlic powder, onion powder, oregano, salt, black pepper, and cayenne if using to make the fajita seasoning.
  3. Slice bell peppers and onion into thin strips about 1/4 inch thick.
  4. Pat chicken breasts dry with paper towels to help crisp the skin.
  5. In two large bowls, toss chicken with 2 tablespoons olive oil and half the fajita seasoning. Toss peppers and onions with remaining seasoning and 1 tablespoon olive oil.
  6. Arrange chicken breasts skin-side up on a large rimmed baking sheet. Scatter peppers and onions around the chicken, avoiding overcrowding.
  7. Roast in the oven for 25-30 minutes. At 15 minutes, use tongs to turn the veggies for even caramelization. Chicken should reach an internal temperature of 165°F (74°C).
  8. If desired, broil on high for 2-3 minutes to crisp the chicken skin further, watching carefully to avoid burning.
  9. Remove from oven, squeeze fresh lime juice over chicken and veggies, and sprinkle chopped cilantro on top.
  10. Serve immediately with warm tortillas and your favorite toppings like sour cream, avocado, or salsa.
