A quick and easy one-pan Greek-inspired chicken dish with crispy skin, roasted baby potatoes, and a bright lemon-oregano marinade, perfect for busy weeknights.

  • 6 bone-in, skin-on chicken thighs
  • 1.5 pounds baby potatoes, halved
  • 1/4 cup extra virgin olive oil
  • Juice and zest of 1 lemon
  • 3 garlic cloves, minced or pressed
  • 2 teaspoons dried oregano
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 large red onion, cut into wedges
  • 1/2 cup pitted Kalamata olives (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together olive oil, lemon juice and zest, garlic, oregano, smoked paprika, salt, and black pepper to prepare the marinade.
  3. Add chicken thighs to the bowl and toss until fully coated. Let sit for 15 minutes if time allows, or roast immediately.
  4. Halve the baby potatoes and cut the red onion into wedges. Toss them in the remaining marinade to coat evenly.
  5. Arrange chicken thighs skin-side up on a large rimmed sheet pan, spacing them apart for air circulation. Nestle potatoes and onion wedges around the chicken. Scatter Kalamata olives over everything if using.
  6. Roast in the oven for 35-40 minutes, turning potatoes once halfway through. Chicken skin should be golden and crisp, and internal temperature should reach 165°F (74°C).
  7. Remove from oven and let chicken rest for 5 minutes to redistribute juices.
  8. Transfer to a platter and garnish with fresh oregano or feta cheese if desired. Serve hot.

Notes

Pat chicken skin dry before marinating for extra crispiness. Avoid overcrowding the pan to prevent soggy skin. Broil for 2-3 minutes at the end if skin isn’t crispy enough. Leftover chicken reheats best in a 350°F oven to maintain crispiness.
