  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • Salt and pepper to taste
  • Optional veggies for the sheet pan: asparagus, cherry tomatoes, or thinly sliced bell peppers (about 2 cups total)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Line a rimmed sheet pan with parchment paper or a silicone baking mat.
  3. If using veggies, spread them evenly on one side of the sheet pan, drizzle with olive oil, salt, and pepper, and toss to coat.
  4. In a small bowl, whisk together honey, Dijon mustard, olive oil, minced garlic, lemon juice, salt, and pepper until smooth and glossy.
  5. Pat the salmon fillets dry with paper towels to remove excess moisture.
  6. Place the salmon skin-side down on the empty side of the sheet pan, leaving space around each fillet.
  7. Brush the honey mustard glaze generously over the top of each fillet.
  8. Roast in the oven for 12-15 minutes, depending on thickness, until the salmon flakes easily with a fork and the glaze is bubbly and slightly caramelized.
  9. Optional: For extra crispy skin, broil for the last 2 minutes, watching closely to avoid burning.
  10. Remove from oven and let rest for 2-3 minutes to allow juices to redistribute.
  11. Serve immediately, carefully lifting the salmon with a spatula to keep the crispy skin intact.
