  • 2 1/4 tsp active dry yeast
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 3 cups all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup brown sugar
  • 2 tbsp granulated sugar
  • 2 tsp ground cinnamon
  • 1/4 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 24 tbsp milk

Instructions

  1. Activate the yeast: Combine warm milk and active dry yeast in a small bowl. Let it sit for 5–10 minutes until frothy.
  2. Mix the dough: Combine sugar, melted butter, egg, salt, and activated yeast mixture in a large mixing bowl or stand mixer. Gradually add flour, 1 cup at a time, until a soft dough forms.
  3. Knead the dough: Knead the dough for 8–10 minutes until smooth and elastic, either by hand on a floured surface or using a stand mixer with a dough hook.
  4. Let it rise: Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1–2 hours, or until doubled in size.
  5. Prepare the filling: Mix brown sugar, granulated sugar, and cinnamon in a small bowl.
  6. Roll out the dough: Punch down the risen dough and roll it out on a floured surface into a rectangle, approximately 12×18 inches.
  7. Add the filling: Spread softened butter evenly over the dough, leaving a 1-inch border. Sprinkle the cinnamon sugar mixture over the butter.
  8. Roll and slice: Roll the dough tightly into a log starting from one long edge. Use a sharp knife or dental floss to slice into 12 even rolls.
  9. Second rise: Arrange the rolls in a greased 9×13-inch baking dish. Cover with a towel and let them rise for another 30–45 minutes.
  10. Bake: Preheat oven to 350°F (175°C). Bake the rolls for 20–25 minutes, or until golden and cooked through.
  11. Make the glaze: Beat cream cheese, butter, powdered sugar, vanilla, and milk until smooth. Adjust thickness by adding more milk if needed.
  12. Glaze and serve: Let the rolls cool for 10 minutes after baking, then spread the cream cheese glaze generously over the top. Serve warm.
