  • Optional: 1 teaspoon vanilla extract or a pinch of cinnamon

Instructions

  1. Rinse 4 cups (600 grams) of strawberries under cold water. Hull them by removing the green tops and cut into halves or quarters based on size. (5 minutes)
  2. Place strawberries, 2 cups (400 grams) granulated sugar, 1/4 cup (60 ml) water, and 2 tablespoons (30 ml) lemon juice in a large heavy-bottomed saucepan. Stir gently to combine. (3 minutes)
  3. Bring mixture to a gentle boil over medium heat, stirring frequently to prevent sticking. Reduce heat to medium-low and simmer, stirring occasionally and breaking down strawberries with a spoon or potato masher for desired texture. Simmer for 30-40 minutes.
  4. Test jam consistency by placing a spoonful on a chilled plate; if it wrinkles when pushed with a finger, it is set. If not, continue simmering and test every 5 minutes. (5-10 minutes)
  5. Remove from heat and let cool slightly for 10 minutes. Ladle jam into sterilized glass jars leaving 1/4 inch headspace. Seal tightly and cool to room temperature before refrigerating. Jam will thicken as it cools. (10 minutes)

Notes

Use ripe strawberries for best natural pectin and sweetness. Do not skip lemon juice as it aids natural setting. Stir frequently to prevent burning. Test jam with wrinkle test on a chilled plate.
