Easy Juicy Sheet Pan Caprese Chicken Recipe with Balsamic Glaze Perfect for Dinner

A quick and easy sheet pan chicken recipe featuring juicy chicken breasts roasted with cherry tomatoes, fresh mozzarella, basil, and a tangy-sweet balsamic glaze. Perfect for a flavorful weeknight dinner with minimal cleanup.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g), thin-cut or halved if thick
  • 1 pint (about 300 g) cherry tomatoes, halved
  • 8 oz (225 g) fresh mozzarella, sliced or bocconcini
  • 1/2 cup loosely packed fresh basil leaves (about 15 g)
  • 1/4 cup (60 ml) balsamic glaze (store-bought or homemade)
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with paper towels. Drizzle 1 tablespoon olive oil over them and sprinkle garlic powder, Italian seasoning, salt, and pepper evenly on both sides.
  3. Place the seasoned chicken breasts spaced evenly on a rimmed 9×13 inch sheet pan.
  4. Scatter the halved cherry tomatoes around the chicken. Drizzle the remaining 1 tablespoon olive oil over the tomatoes and season lightly with salt and pepper.
  5. Roast in the oven for 20 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the tomatoes are soft and slightly blistered.
  6. Remove the pan from the oven and gently place slices of fresh mozzarella on top of each chicken breast.
  7. Return to the oven and bake for an additional 5 minutes, or until the mozzarella is just melted but not runny.
  8. Remove from the oven, scatter fresh basil leaves over the chicken and tomatoes, then drizzle the balsamic glaze generously on top.
  9. Serve immediately while warm.

Notes

Pat chicken dry before seasoning to ensure better browning. Use a meat thermometer to avoid overcooking; chicken is done at 165°F (74°C). Warm balsamic glaze slightly if too thick for easy drizzling. Pounding thick chicken breasts to even thickness helps with uniform cooking. Leftovers keep well refrigerated for up to 3 days and reheat best in the oven to maintain juiciness.
