  • 6 cups cubed seedless watermelon
  • 1/2 cup (100g) granulated sugar
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 68 fresh mint leaves, finely chopped (optional)
  • 1/2 cup (120ml) water
  • A pinch of salt

Instructions

  1. Make the simple syrup by combining 1/2 cup water and 1/2 cup granulated sugar in a saucepan. Heat over medium heat, stirring occasionally until the sugar dissolves completely (about 3–5 minutes). Remove from heat and let cool to room temperature.
  2. Cut about 6 cups of seedless watermelon into cubes. Remove any seeds if present.
  3. Place the watermelon cubes into a blender or food processor and blend until smooth, about 30–60 seconds. For a smoother texture, strain the puree through a fine mesh strainer into a bowl.
  4. In a large bowl, combine the watermelon puree, cooled simple syrup, 2 tablespoons fresh lime juice, and a pinch of salt. Stir well to combine. Stir in chopped mint leaves now or reserve some for garnish.
  5. Pour the mixture into a shallow airtight container. Freeze for at least 4 hours or until firm, stirring every hour for the first 2 hours to break up ice crystals and keep the texture smooth.
  6. Scoop into bowls or cones and garnish with fresh mint or a thin lime slice if desired.

Notes

Stir the sorbet mixture every hour during the first 2 hours of freezing to keep the texture smooth and creamy. Use a metal container and set freezer to a colder temperature to speed up freezing. For a softer texture, freeze for about 2 hours. Adding a splash of sparkling water before serving adds a fun fizz. Adjust sweetness based on watermelon ripeness. Fresh lime juice is preferred over bottled for better flavor.
