  • 1 cup (150g) blueberries
  • 1 cup (150g) raspberries
  • Optional: fresh mint leaves for garnish

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, cream together softened butter and granulated sugar until light and fluffy, about 3-4 minutes with an electric mixer.
  2. Add the egg and vanilla extract, mixing until combined.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to the butter mixture, mixing on low speed until just combined. Dough will be soft but not sticky.
  4. Press dough evenly into a 9-inch pizza pan or baking sheet, forming a smooth, even layer. Flatten and spread dough to edges.
  5. Bake crust for 15 minutes or until edges turn golden brown. Remove and cool completely on a rack.
  6. While crust cools, beat softened cream cheese and butter until smooth and creamy, about 2-3 minutes.
  7. Slowly add powdered sugar and vanilla extract, beating until fully incorporated and fluffy. Adjust sweetness if needed.
  8. Spread cream cheese frosting evenly over cooled crust with a spatula.
  9. Arrange strawberries, blueberries, and raspberries on top in patriotic patterns or scatter evenly. Add fresh mint leaves if desired.
  10. Refrigerate assembled fruit pizza for at least 1 hour before serving to let flavors meld and frosting firm up.
