Easy Refreshing Smoked Salmon Cucumber Bites

Crisp cucumber rounds topped with a creamy, tangy spread and silky smoked salmon make these bites perfect for parties and quick snacks.

  • 2 large English cucumbers, sliced into 1/2-inch rounds
  • 8 ounces thinly sliced smoked salmon
  • 4 ounces cream cheese, softened
  • 2 tablespoons Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • Zest of 1 lemon
  • 1 tablespoon capers, drained and chopped (optional)
  • 1/4 teaspoon garlic powder
  • Freshly ground black pepper, to taste
  • 1 tablespoon fresh chives, chopped, for garnish

Instructions

  1. Wash and dry the English cucumbers. Slice into 1/2-inch thick rounds using a sharp knife. Pat dry with a paper towel to remove excess moisture.
  2. In a mixing bowl, combine softened cream cheese and Greek yogurt. Add lemon zest, chopped dill, garlic powder, and black pepper. Mix until smooth and creamy. Adjust seasoning to taste.
  3. Spread about 1 teaspoon of the creamy mixture on each cucumber slice.
  4. Tear or cut smoked salmon into bite-sized pieces and place one piece on top of the creamy spread on each cucumber slice.
  5. Sprinkle chopped capers (if using) and fresh chives over the top. Add a tiny extra grind of black pepper if desired.
  6. Place the assembled bites on a platter and chill in the refrigerator for at least 15 minutes before serving.

Notes

Pat cucumber slices dry to prevent sogginess. Use room temperature cream cheese for easier spreading. Chill bites before serving to meld flavors and keep cucumbers crisp. For dairy-free, substitute cream cheese and Greek yogurt with cashew-based cream cheese alternative.
