Easy Smoked Salmon Cucumber Bites with Whipped Dill Cream Cheese

A quick and easy snack featuring crisp cucumber rounds topped with whipped dill cream cheese and smoky salmon, perfect for any occasion.

  • 1 large English cucumber, washed and sliced into ½-inch rounds
  • 4 ounces thinly sliced smoked salmon
  • 8 ounces full-fat cream cheese, softened to room temperature
  • 2 tablespoons finely chopped fresh dill leaves
  • 1 tablespoon fresh lemon juice
  • A pinch of garlic powder
  • Salt and freshly cracked black pepper to taste
  • Optional garnishes: capers, finely sliced red onion, smoked paprika

Instructions

  1. Slice the English cucumber into ½-inch (1.25 cm) rounds using a sharp knife. Pat dry with paper towels to absorb excess moisture. (5 minutes)
  2. Place the softened cream cheese in a mixing bowl. Whip with a hand mixer or stand mixer on medium-high speed for 2-3 minutes until light and fluffy.
  3. Add chopped fresh dill, lemon juice, garlic powder, salt, and pepper to the whipped cream cheese. Mix on low speed until evenly incorporated. Adjust seasoning to taste. (3 minutes)
  4. Spread about 1 tablespoon of the whipped dill cream cheese evenly over each cucumber slice.
  5. Tear or fold small pieces of smoked salmon and place one piece on top of each cream cheese dollop. Add optional garnishes if desired.
  6. Refrigerate the assembled bites for 10-15 minutes before serving to enhance flavor and keep cucumber crisp.
  7. Arrange bites on a serving platter and serve chilled. Best enjoyed fresh but can be stored covered in the fridge for up to 24 hours.

Notes

If cream cheese is too stiff to whip, microwave in 10-second increments to soften. Pat cucumber slices dry to prevent sogginess. Assemble just before serving for best texture. Can substitute cream cheese with whipped coconut cream or cashew-based cheese for dairy-free option.
