A simple, comforting slow cooker recipe featuring tender chicken breasts cooked in a creamy, buttery ranch sauce with a tangy kick from pepperoncini peppers. Perfect for busy weeknights with minimal prep.

  • 2 pounds boneless, skinless chicken breasts
  • 1 packet (approx. 1 oz / 28 grams) ranch seasoning mix (recommend Hidden Valley)
  • 1 packet (approx. 1 oz / 28 grams) au jus gravy mix
  • 1/2 cup (113 grams, 1 stick) unsalted butter
  • 45 pepperoncini peppers with juice (about 1/4 cup / 60 ml juice)
  • Freshly cracked black pepper to taste (about 1/4 teaspoon)
  • Optional: fresh parsley for garnish

Instructions

  1. Rinse and pat dry 2 pounds of boneless, skinless chicken breasts. Place them in the bottom of your crockpot in a single layer.
  2. Sprinkle one packet of ranch seasoning mix evenly over the chicken, followed by one packet of au jus gravy mix.
  3. Cut 1/2 cup of unsalted butter into 4-5 pats and scatter them over the chicken.
  4. Add 4-5 whole pepperoncini peppers onto the chicken and pour in about 1/4 cup of their juice.
  5. Season with freshly cracked black pepper to taste.
  6. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and easily shredded.
  7. Shred the chicken directly in the crockpot using two forks, mixing it with the buttery sauce.
  8. Stir gently to combine and adjust seasoning if needed.
  9. Serve warm, garnished with chopped fresh parsley if desired.

Notes

For dairy-free, substitute butter with plant-based margarine or coconut oil and use dairy-free ranch seasoning. To reduce sodium, rinse pepperoncini peppers and use reduced-sodium seasoning mixes. If sauce is too thin, cook uncovered on high for 15-20 minutes to thicken. Avoid opening lid frequently during cooking to maintain moisture.
