  • 8 ounces Brie cheese, sliced thinly
  • 1 large apple, thinly sliced (preferably Honeycrisp or Granny Smith)
  • 12 teaspoons fresh thyme, finely chopped
  • 2 tablespoons honey (wildflower or clover honey recommended)
  • 1 tablespoon olive oil
  • Pinch of salt
  • Freshly ground black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the baguette into 1/2-inch thick rounds and lay them on a baking sheet in a single layer.
  3. Brush each bread slice lightly with olive oil using a pastry brush or the back of a spoon.
  4. Toast the bread in the oven for 8-10 minutes until crisp but not overly browned.
  5. While the bread is toasting, thinly slice the Brie cheese without removing the rind.
  6. Core and thinly slice the apple into 1/8-inch thick rounds or half-moons.
  7. Remove the toasted bread from the oven and quickly place a slice of Brie on each piece, followed by 2-3 apple slices.
  8. Return the baking sheet to the oven and bake for an additional 5-7 minutes until the Brie starts to melt but is not fully oozing.
  9. In a small bowl, mix the honey with the freshly chopped thyme to meld flavors.
  10. Remove the crostini from the oven and drizzle each piece lightly with the thyme-infused honey.
  11. Finish with a pinch of salt and freshly ground black pepper.
  12. Serve immediately while warm.

Use fresh thyme for best flavor; dried thyme can be substituted at half the amount. Drizzle honey just before serving to prevent sogginess. Thin apple slices ensure easy eating and balanced bites.
