Flavorful Fig and Prosciutto Flatbread Pizza Easy Homemade Recipe with Gorgonzola Hot Honey

A quick and easy flatbread pizza combining sweet figs, salty prosciutto, creamy gorgonzola, and a spicy hot honey drizzle for a perfect balance of flavors.

  • 2 store-bought flatbreads (810 inches each)
  • 68 ripe fresh figs, sliced (or dried figs rehydrated in warm water)
  • 68 thin slices prosciutto
  • 4 oz (115 g) crumbled gorgonzola cheese
  • 6 oz (170 g) fresh mozzarella, sliced
  • 1 cup fresh arugula (optional)
  • 1/4 cup (60 ml) honey
  • 1 tsp red pepper flakes
  • 2 tbsp extra virgin olive oil
  • 1 tsp freshly squeezed lemon juice
  • 1 tsp fresh thyme leaves (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Place your pizza stone inside if you have one, or line a baking sheet with parchment paper. Let the oven heat fully for about 20 minutes.
  2. Prepare the hot honey glaze: In a small saucepan over low heat, gently warm 1/4 cup honey with 1 teaspoon red pepper flakes. Stir occasionally for 3-4 minutes until fragrant but not boiling. Remove from heat and stir in 1 teaspoon fresh lemon juice and thyme leaves if using. Set aside to cool slightly.
  3. Slice the figs into thin wedges about 1/4 inch thick. Slice mozzarella into similar thin pieces.
  4. Brush each flatbread lightly with 1 tablespoon olive oil on both sides.
  5. Place flatbreads directly on the pizza stone or baking sheet. Toast in the oven for 5-7 minutes until slightly golden and crisp but not fully baked.
  6. Remove flatbreads from oven. Evenly distribute mozzarella slices, then layer sliced figs and prosciutto on top. Sprinkle crumbled gorgonzola over everything.
  7. Return the topped flatbreads to the oven for another 8-10 minutes, or until cheese is melted and bubbly and edges are golden brown.
  8. Drizzle the warm gorgonzola hot honey generously over the pizzas. Top with fresh arugula if using.
  9. Cut into slices and serve immediately.

Notes

Use room temperature cheese for even melting. Avoid overloading toppings to keep crust crisp. Warm honey gently to avoid bitterness. Let pizza rest 2-3 minutes after baking for easier slicing. For gluten-free, use gluten-free flatbread or cauliflower crust. Store hot honey in fridge up to 3 days. Reheat leftovers in skillet or toaster oven to maintain crispness.
