A quick and easy summer BBQ side dish featuring grilled corn slathered in smoky, tangy chipotle lime butter that’s addictive and crowd-pleasing.

  • 4 ears fresh corn on the cob, husks removed
  • 1/2 cup (1 stick) unsalted butter, softened to room temperature
  • 1 teaspoon chipotle powder
  • 2 tablespoons fresh lime juice (from 1 lime)
  • 1/2 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons fresh cilantro, finely chopped (optional)

Instructions

  1. Preheat your grill to medium-high heat (375-450°F or 190-230°C), about 10 minutes.
  2. In a small bowl, combine softened butter, chipotle powder, lime juice, garlic powder, sea salt, black pepper, and cilantro (if using). Mix until smooth and creamy. Set aside.
  3. Remove husks and silk from the corn ears and pat dry with a paper towel.
  4. Place the corn directly on the grill grates. Grill for 10-15 minutes, turning every 3-4 minutes until kernels are evenly charred with golden brown and blackened spots.
  5. Remove corn from the grill and immediately brush generously with the chipotle lime butter while still hot.
  6. Optionally, squeeze extra fresh lime juice over the corn before serving. Serve hot.

Notes

Pat corn dry before grilling to avoid steaming and ensure good char marks. Adjust chipotle powder to control heat level. Butter can be made ahead and refrigerated. For vegan option, use plant-based butter. Broiling or grill pan can be used if no grill is available.
