Flavorful Grilled Peach and Prosciutto Salad with Burrata

A quick and elegant summer salad featuring smoky grilled peaches, salty prosciutto, and creamy burrata, perfect for warm evenings and casual gatherings.

Ingredients

  • 3 medium ripe peaches, halved and pitted
  • 6 to 8 thin slices prosciutto
  • 8 ounces burrata cheese
  • 4 cups mixed greens (arugula, baby spinach, or spring mix)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • A handful fresh basil leaves, torn
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • Balsamic glaze, optional for drizzling

Instructions

  1. Preheat your grill or grill pan to medium-high (about 400°F / 200°C), approximately 5 minutes.
  2. Rinse and dry the peaches, cut in half and remove pits. Brush each half lightly with olive oil.
  3. Place peaches cut side down on the hot grill. Grill for 3-4 minutes until grill marks appear and peaches are slightly softened but still hold shape.
  4. Flip peaches and grill the skin side for another 2 minutes. Remove and let cool slightly.
  5. In a large bowl, combine mixed greens with torn basil leaves. Drizzle with 1 tablespoon olive oil, fresh lemon juice, salt, and pepper. Toss gently to coat evenly.
  6. Slice each grilled peach half into 2-3 wedges. Lay peach slices over the greens on a serving platter or individual plates.
  7. Tear prosciutto into rustic pieces and scatter over the salad.
  8. Tear or cut burrata into chunks and place strategically on the salad.
  9. Drizzle honey evenly over the salad. If using, add a light drizzle of balsamic glaze.
  10. Sprinkle flaky sea salt and freshly ground black pepper to taste. Serve immediately.

Notes

Do not over-grill peaches; they should be tender but not mushy. Brush peaches with olive oil before grilling to prevent sticking and encourage caramelization. Use fresh burrata the same day for best texture. Prepare greens and dressing ahead if needed, but grill peaches and add burrata just before serving.
