A quick and easy grilled chicken recipe featuring juicy pineapple and a sweet honey glaze that balances smoky, sweet, and savory flavors perfectly.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 680 grams)
  • 1 fresh pineapple, peeled and sliced into rings or chunks
  • 3 tablespoons raw honey
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce (low-sodium preferred)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon smoked paprika or chili flakes (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides with salt, pepper, and optional smoked paprika or chili flakes.
  2. In a mixing bowl, whisk together honey, minced garlic, soy sauce, olive oil, and lemon juice until smooth.
  3. Slice the peeled pineapple into rings or chunks about ½-inch thick and brush lightly with olive oil.
  4. Preheat the grill to medium-high heat (around 400°F / 200°C).
  5. Grill pineapple slices for 2-3 minutes per side until grill marks appear and fruit caramelizes slightly. Remove and set aside.
  6. Place chicken breasts on the grill and cook for about 5-6 minutes per side, brushing generously with honey glaze every 2 minutes.
  7. Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (74°C).
  8. Transfer chicken to a plate and let rest for 5 minutes.
  9. Serve grilled pineapple alongside or on top of the chicken and drizzle any leftover honey glaze over the dish.

Notes

Brush the honey glaze multiple times during grilling to build layers of flavor and achieve a sticky, caramelized finish. Keep the grill lid closed as much as possible to trap smoke and heat. Watch pineapple carefully to avoid burning. Let chicken rest after grilling to lock in juices.
