  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

  • 8 small corn or flour tortillas
  • 1 ripe avocado, sliced
  • 1/4 cup fresh cilantro leaves, chopped
  • 1/4 red onion, thinly sliced (optional)
  • Fresh lime wedges for serving
  • Optional: crumbled queso fresco or shredded cheese

Instructions

  1. In a large bowl, whisk together honey, fresh lime juice, minced garlic, cumin, smoked paprika, salt, pepper, and olive oil.
  2. Add the sliced chicken, tossing to coat well. Let it marinate for at least 15 minutes, or up to 1 hour.
  3. While the chicken marinates, slice the avocado, chop the cilantro, and thinly slice the red onion if using. Set aside and keep covered to avoid browning.
  4. Place your skillet over medium-high heat. Once hot, add a little olive oil if needed to prevent sticking.
  5. Add the marinated chicken pieces in a single layer. Cook for about 4-5 minutes per side, or until nicely browned and cooked through (internal temperature of 165°F/74°C). Avoid overcrowding the pan; cook in batches if necessary.

  7. Place chicken strips on each tortilla, add avocado slices, sprinkle with chopped cilantro and red onion, and finish with a squeeze of fresh lime juice. Add cheese if desired.
