  • 1 teaspoon fresh sage, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the turkey breast dry with paper towels to ensure the skin crisps nicely.
  2. In a small bowl, combine the chopped rosemary, thyme, sage, minced garlic, lemon zest, salt, and pepper. Gradually add olive oil and mix until it forms a paste-like consistency.
  3. Rub the herb mixture evenly over the turkey breast, making sure to get under the skin where possible to infuse flavor deeply.
  4. Place the turkey on a roasting rack inside a roasting pan. Insert a meat thermometer into the thickest part of the breast without touching bone.

  6. In a small saucepan, combine pomegranate juice, pomegranate molasses, and honey. Simmer over medium heat, stirring often, until the mixture reduces to a syrupy glaze (about 10-15 minutes). Watch closely to avoid burning.
