  • 1 cup frozen corn kernels, thawed
  • 1 cup canned black beans, drained and rinsed

Instructions

  1. Rinse 1 cup of rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine rinsed rice with 2 cups water or broth and a pinch of salt. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15-18 minutes until liquid is absorbed and rice is tender.
  3. Remove from heat and let it sit, covered, for 5 minutes.
  4. Fluff the rice with a fork. Stir in olive oil or butter, lime zest, lime juice, and chopped cilantro. Taste and adjust salt if needed.
  5. While the rice cooks, heat a large skillet over medium-high heat. Add the ground beef, breaking it up with a spatula. Cook for about 5 minutes until it starts to brown. Drain excess fat if necessary.
  6. Add diced onion and minced garlic to the skillet. Cook for another 3-4 minutes until the onion softens and the beef is fully browned.
  7. Sprinkle in chili powder, cumin, smoked paprika, salt, and pepper. Stir to combine, cooking for about 1 more minute to toast the spices and deepen the flavor.
  8. Stir in the thawed corn and rinsed black beans. Cook for another 2-3 minutes until everything is heated through. Taste and adjust seasoning if needed.
  9. Spoon a generous portion of cilantro lime rice into bowls. Top with a hearty scoop of the beef mixture.
  10. Add slices of avocado, a sprinkle of shredded cheese, and your favorite salsa. Optionally, add a dollop of sour cream or Greek yogurt and a wedge of lime for extra zing.
  11. Give the bowl a gentle squeeze of fresh lime juice right before eating. Serve immediately.
