  • 1/2 cup (120ml) milk (whole or 2%)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking
  • Pure maple syrup for serving

Instructions

  1. In a medium bowl, sift together 1 cup all-purpose flour, 1 tablespoon baking powder, 2 tablespoons sugar, and 1/4 teaspoon salt.
  2. In another bowl, soften 4 ounces cream cheese until smooth. Add 1/2 cup milk, 1 large egg, and 1 teaspoon vanilla extract. Whisk until completely combined and creamy.
  3. Slowly add dry ingredients to the wet cream cheese mixture, stirring gently with a whisk or spatula. Do not overmix; a few small lumps are okay.
  4. Preheat a skillet or griddle over medium heat and add a little butter or oil to coat the surface. The pan is ready when a few drops of water sizzle on contact.
  5. Pour about 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip carefully and cook another 1-2 minutes until golden and cooked through.
  6. Place cooked pancakes on a plate and cover loosely with foil to keep warm while finishing the batch.
  7. Stack the pancakes, drizzle generously with pure maple syrup, and serve immediately.

Notes

If batter is too thick, add a tablespoon of milk to loosen. If too thin, add a bit more flour. Cook pancakes on medium heat and flip only once for best texture. Keep pancakes warm in a low oven if making a large batch. Avoid overmixing to prevent rubbery pancakes.
