  • 3 ½ cups (440g) all-purpose flour
  • 2 ¼ tsp (7g) active dry yeast
  • 1 cup (240ml) warm whole milk
  • 4 tbsp (56g) unsalted butter, softened
  • ¼ cup (85g) honey
  • 2 tbsp (25g) granulated sugar
  • 1 tsp (6g) salt
  • 1 large egg, room temperature
  • 3 tbsp (42g) unsalted butter, melted (for glaze)

Instructions

  1. Activate the yeast: In a small bowl, combine warm milk (about 110°F / 43°C), 2 tbsp honey, and yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Mix the dough: In a large bowl or stand mixer, combine flour, sugar, and salt. Add softened butter, egg, and the yeast mixture. Mix on low speed until ingredients come together.
  3. Knead the dough: Knead for 8-10 minutes by hand or 5-7 minutes with a dough hook until smooth and elastic but slightly tacky. Add flour or milk as needed to adjust texture.
  4. First rise: Place dough in a greased bowl, cover with damp towel or plastic wrap, and let rise in a warm spot for 1 to 1 ½ hours until doubled in size.
  5. Shape the rolls: Punch down dough and turn onto a floured surface. Divide into 12 equal pieces (~2 oz / 56g each). Shape into smooth balls.
  6. Second rise: Place rolls close together in a greased 9×13-inch pan. Cover loosely and let rise for 30-40 minutes until puffy.
  7. Preheat oven to 350°F (175°C).
  8. Bake rolls for 18-22 minutes until golden brown and hollow sounding when tapped. Tent with foil if browning too quickly.
  9. Apply honey butter glaze: Mix remaining 1 tbsp honey with 3 tbsp melted butter and brush over hot rolls immediately after baking.
  10. Cool slightly and serve warm. Best enjoyed fresh but still good the next day.

Notes

Do not rush rising times for best fluffiness. Brush honey butter glaze while rolls are hot for shine and flavor. If dough is sticky, add flour sparingly; if dry, add milk gradually. Avoid opening oven door frequently during baking.
