Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm whole milk (110°F) with honey and yeast. Stir gently and let sit for 5-7 minutes until foamy.
  2. Mix wet ingredients: Add softened unsalted butter and eggs to the yeast mixture. Whisk gently until combined.
  3. Add dry ingredients: Gradually mix in all-purpose flour and salt. Mix with a stand mixer dough hook on low speed for about 2 minutes or stir by hand until a shaggy dough forms.
  4. Knead the dough: Knead for 8-10 minutes until smooth, elastic, and slightly tacky but not sticky. Add flour a teaspoon at a time if too sticky.
  5. First rise: Lightly grease the bowl, cover dough with towel or plastic wrap, and let rise in a warm, draft-free spot for 1 to 1.5 hours until doubled in size.
  6. Shape the rolls: Punch down dough, divide into 12 equal pieces (~2 oz each), roll into smooth balls, and place snugly in a greased 9-inch round cake pan or baking sheet.
  7. Second rise: Cover loosely and let rolls rise for 30-45 minutes until puffy and nearly doubled.
  8. Bake: Preheat oven to 375°F (190°C). Bake rolls for 18-20 minutes until golden brown and hollow sounding when tapped.
