  • 2 tablespoons (30 g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 cup strawberries, hulled and halved
  • 1 cup blueberries, rinsed and patted dry
  • 1 large kiwi, peeled and sliced into rounds
  • 1 medium banana, sliced into coins
  • Optional: small mint leaves for garnish
  • Maple syrup or honey for drizzling
  • Wooden skewers (6-8 inches long)

Instructions

  1. Mix the dry ingredients: In a medium bowl, whisk together flour, sugar, baking powder, and salt. Set aside.
  2. Combine wet ingredients: In another bowl, beat egg with milk, melted butter, and vanilla extract until smooth.
  3. Make the batter: Pour wet ingredients into dry mix and stir gently just until combined. Let rest for 5 minutes.
  4. Heat the pan: Warm a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Cook mini pancakes: Drop about 1 tablespoon of batter per pancake onto the pan, spacing about 1 inch apart. Cook 1-2 minutes until bubbles form and edges look set.
  6. Flip and finish cooking: Flip carefully and cook another 1-2 minutes until golden and cooked through. Transfer to plate and cover loosely with foil. Repeat with remaining batter.
