  • 1 1/4 cups (300ml) milk (whole or 2%, dairy-free milk works too)
  • 1 large egg, room temperature
  • 2 tablespoons (28g) unsalted butter, melted and cooled
  • 1 teaspoon (5ml) vanilla extract
  • 1/2 cup (120ml) maple syrup
  • 2 tablespoons (25g) brown sugar
  • 1 tablespoon (14g) unsalted butter
  • 1/2 teaspoon (2.5ml) vanilla extract
  • 1/4 teaspoon cinnamon (optional)

Instructions

  1. In a large bowl, whisk together the flour, baking powder, granulated sugar, and salt.
  2. In a separate bowl, beat the egg, then add milk, melted butter, and vanilla extract. Whisk gently to combine.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined; the batter should be slightly lumpy.
  4. Heat a non-stick skillet or griddle over medium heat and add a small pat of butter to coat the surface.
  5. Drop tablespoon-sized dollops of batter onto the skillet about 1 inch apart. Cook for 2-3 minutes until bubbles form and edges look set.
  6. Flip each dipper and cook for another 1-2 minutes until golden brown and cooked through.
  7. While cooking the dippers, combine maple syrup, brown sugar, and butter in a small saucepan over low heat. Stir until sugar dissolves and butter melts.
  8. Remove syrup from heat and stir in vanilla extract and cinnamon if using.
  9. Transfer cooked dippers to a cooling rack or plate lined with paper towels to absorb excess butter.
  10. Serve warm with the sweet syrup on the side for dipping.

Notes

Do not overmix the batter to keep dippers fluffy. Use medium heat to avoid burning. Fresh baking powder ensures fluffiness. Butter is preferred for flavor and browning. Batter can be prepared ahead and refrigerated for up to 24 hours. Reheat leftovers in oven or toaster oven to maintain texture; avoid microwaving.
