Instructions

  1. In a large bowl, whisk together ½ cup all-purpose flour, ½ cup vanilla protein powder, 1 teaspoon baking powder, and a pinch of salt.
  2. In a separate bowl, beat 2 large eggs until slightly frothy, then whisk in ¾ cup milk, ½ cup creamy plain Greek yogurt, 1 teaspoon vanilla extract, and optional 1-2 tablespoons honey or maple syrup.
  3. Slowly pour the wet ingredients into the dry mix and stir gently just until combined. Do not overmix; a few lumps are okay.
