Ingredients

  • Baguette or rustic Italian bread, sliced about ½ inch thick
  • Extra virgin olive oil (for brushing and drizzling)
  • Fresh garlic cloves, halved
  • Ripe Roma or cherry tomatoes, diced
  • Fresh basil leaves, finely chopped
  • Red onion, minced
  • Salt and freshly cracked black pepper
  • Balsamic vinegar or glaze (optional)
  • Fresh mozzarella balls or burrata
  • Roasted red peppers, sliced
  • Marinated artichoke hearts, chopped
  • Sliced avocado with a sprinkle of lemon juice
  • Olives, pitted and chopped (Kalamata or Castelvetrano)
  • Ricotta cheese (whole milk recommended)
  • Prosciutto slices
  • Pesto sauce (store-bought or homemade)
  • Sun-dried tomatoes, chopped
  • Chopped parsley or oregano for garnish
  • Crushed red pepper flakes (optional)
  • Fresh lemon wedges

Instructions

  1. Preheat your oven to 400°F (200°C) or heat a grill pan over medium heat.
  2. Slice the baguette into about ½ inch thick pieces. If bread is fresh, let it sit out or lightly toast to dry it.
  3. Lightly brush each slice with extra virgin olive oil on both sides.
  4. Arrange slices on a baking sheet or grill pan in a single layer. Bake or grill for 4-5 minutes per side until crispy and golden brown.
  5. Rub the toasted bread with halved garlic cloves to infuse flavor.
  6. In a mixing bowl, combine diced tomatoes, minced red onion, chopped basil, salt, pepper, and a splash of balsamic vinegar or glaze. Let sit for 10 minutes.
  7. Arrange other toppings (mozzarella, roasted peppers, olives, ricotta, pesto, prosciutto, etc.) in separate bowls for easy access.
  8. Place toasted bread slices on a large serving board or platter and encourage guests to mix and match toppings to create their perfect bite.

Notes

Toast bread just before serving to keep it crunchy. Prepare toppings ahead but keep them refrigerated and bring to room temperature before serving. Avoid soggy bread by serving wetter toppings on the side. Customize toppings to dietary needs by swapping cheeses and bread.
